Faire 11 incisions (ne pas transpercer la viande)  dans le r\u00f4ti ou le demander \u00e0 votre boucher. Garnir entre chaque tranche d&rsquo;une demi tranche de fromage, le bacon et l&rsquo;autre 1\/2 tranche de fromage. Ficelez. Dans un plat \u00e0 gratin, mettre un filet d&rsquo;huile, l&rsquo;ail en chemise et l&rsquo;oignon pel\u00e9 et coup\u00e9 en 4. D\u00e9posez la viande. Parsemez celle ci de morceau de beurre et enfournez 50 min. Eteindre le four et laissez la viande reposer 10 min avant de la couper et servir.
