Pelez et \u00e9mincez les \u00e9chalotes, ajoutez les dans la casserole. Faites cuire \u00e0 moyen-doux\u00a0 et \u00e0 couvert\u00a0 30 minutes. Pendant ce temps \u00f4tez les queues des cerises, lavez les et d\u00e9noyautez en le tiers. Retirez le filet mignon, r\u00e9servez le au chaud et couvert. Laissez la casserole sur le feu, d\u00e9graissez le jus de cuisson avec le vinaigre puis ajoutez le vin, le sucre, les baies roses (pour ceux qui n&rsquo;aiment pas croquer les grains lors de la d\u00e9gustation, placez les dans une petite boule \u00e0 \u00e9pices ), la cannelle, du sel et du poivre. Portez \u00e0 \u00e9bullition et faites cuire 5 minutes. Ajoutez les cerises, et laissez cuire de nouveau 5 minutes.
