Dans un sauteuse, mettre l&rsquo;huile et faire revenir l&rsquo;\u00e9chalote jusqu&rsquo;\u00e0 ce qu&rsquo;elle devienne translucide. Ajoutez ensuite les \u00e9pinards et laissez les tomber pendant 5 \u00e0 10 min. Pendant ce temps, pr\u00e9chauffez le four \u00e0 180\u00b0C. Ajoutez la ricotta dans les \u00e9pinards et laissez cuire 5 min. Placez 2 feuilles de brick l&rsquo;une sur l&rsquo;autre et mettre la moiti\u00e9 de la pr\u00e9paration au centre. Repliez chaque cot\u00e9 vers le centre et recommencez. Retournez le petit pain sur une plaque recouverte de papier cuisson, faites la deuxi\u00e8me\u00a0 et enfournez environ 15 min. Jusqu&rsquo;\u00e0 ce que les brick soit bien dor\u00e9es.
