Si vous utilisez des \u00e9pinards et non des pousses, \u00f4tez la tige en pliant la feuille d\u2019\u00e9pinard en 2 sur elle-m\u00eame dans la longueur et tirez la tige en la soulevant vers le haut. Hachez les grossi\u00e8rement. Pelez et \u00e9mincez les oignons.<\/p>\n<p>Faites chauffez le bouillons de l\u00e9gumes et gardez le au chaud, salez le si besoin. Faites chauffer 1 cs d\u2019huile dans une sauteuse \u00e0 feu moyen et faites fondre les oignons pendant 3 \u00e0 4 minutes. Ajoutez le riz et faites le nacrer pendant 2 minutes. (il doit \u00eatre translucide). Mouillez avec le vin blanc et m\u00e9langez jusqu\u2019\u00e0 \u00e9vaporation du liquide. Versez le bouillon petit \u00e0 petit et faites cuire environ 18 minutes en m\u00e9langeant de temps en temps.<\/p>\n<p>Dans une po\u00eale, faites chauffer la seconde cuiller\u00e9e d\u2019huile et placez y les \u00e9pinards. Baissez le feu et laissez les \u00ab\u00a0tomber\u00a0\u00bb (Cuire \u00e0 feu doux des v\u00e9g\u00e9taux riches en eau pour provoquer leur diminution). 5 minutes avant la fin de cuisson du riz, ajoutez les \u00e9pinards.<\/p>\n<p>Quand le riz est cuit, coupez le feu, ajoutez le beurre, le parmesan, remuer et couvrez 5 minutes.
