{"id":531,"date":"2009-05-29T08:47:02","date_gmt":"2009-05-29T06:47:02","guid":{"rendered":"http:\/\/www.peches-mignons.fr\/?p=531"},"modified":"2010-06-15T06:58:45","modified_gmt":"2010-06-15T04:58:45","slug":"risotto-aux-asperges-et-au-jambon-sec","status":"publish","type":"post","link":"https:\/\/www.peches-mignons.fr\/?p=531","title":{"rendered":"Risotto aux asperges et au jambon sec"},"content":{"rendered":"<p>Ah le risotto, ma petite passion, toujours cr\u00e9meux, toujours d\u00e9licieux, toujours savoureux, c\u00a0\u00bbest un plaisir de le d\u00e9guster.<\/p>\n<p style=\"text-align: center\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.peches-mignons.fr\/wp-content\/uploads\/2009\/05\/P1040198.jpg\" style=\"border-width: 0px; width: 300px; height: 400px\" alt=\"Risotto, Asperges, Jambon sec, Parmesan, Mascarpone, Vin, Alcool, Riz, \" title=\"Risotto aux asperges et au jambon sec\" width=\"300\" border=\"0\" height=\"400\" \/><\/p>\n<p><!--more--><\/p>\n<p>Pour 3 personnes<\/p>\n<p>&#8211; 1\/2 botte d&rsquo;asperges vertes<br \/>\n&#8211; 35g de mascarpone<br \/>\n&#8211; 2 fines tranches de jambon sec<br \/>\n-175g de riz arborio<br \/>\n&#8211; 1\/2 oignon<br \/>\n&#8211; 20g de parmesan fraichement r\u00e2p\u00e9<br \/>\n&#8211; 60cl de bouillon de volaille<br \/>\n&#8211; 10cl de vin blanc<br \/>\n&#8211; 10g de beurre<br \/>\n&#8211; Sel, poivre du moulin<\/p>\n<p>Nettoyez les asperges, pelez la queue et coupez les en tron\u00e7ons de 2 &#8211; 3 cm. Pelez et ciselez l&rsquo;oignon. Faites fondre le beurre dans une casserole, faites y fondre l&rsquo;oignon sans coloration. Incorporez le riz, remuez. V\u00e9rifiez qu&rsquo;il soit transparent avant de versez le vin blanc. Laissez absorber tout en remuant. A ce moment l\u00e0 comptez 18 minutes de cuisson. Versez le bouillon chaud louche par louche au fur et \u00e0 mesure que le riz l&rsquo;absorbe.\u00a0 8 minutes avant la fin de cuisson, rajoutez les asperges et m\u00e9langez. Quant les grains de riz sont moelleux, salez, poivrez, \u00e9teignez le feu et couvrez pendant 1 minutes or du feu.
