Dans une cocotte, versez la moiti\u00e9 de l&rsquo;huile et faites revenir le r\u00f4ti sur toute les faces, d\u00e9barrassez le dans une assiette, versez le reste d&rsquo;huile et faites revenir les \u00e9chalotes et l&rsquo;ail. D\u00e9glacez avec le vin, rajoutez la tomate, les herbes de Provence, la viande, salez et poivrez. Remuez, couvrez et laissez cuire \u00e0 feu doux une dizaine de minutes. Rajoutez ensuite les f\u00e8ves, 1 verre d&rsquo;eau, couvrez et laissez cuire encore 20\/25 minutes. V\u00e9rifiez de temps en temps, si la sauce est un peu trop \u00e9paisse, ajoutez un peu d&rsquo;eau.
