{"id":89,"date":"2008-01-13T10:44:11","date_gmt":"2008-01-13T09:44:11","guid":{"rendered":"http:\/\/www.peches-mignons.fr\/?p=89"},"modified":"2008-01-15T17:33:11","modified_gmt":"2008-01-15T16:33:11","slug":"saute-de-veau-au-noilly-prat","status":"publish","type":"post","link":"https:\/\/www.peches-mignons.fr\/?p=89","title":{"rendered":"Saut\u00e9 de veau au Noilly Prat"},"content":{"rendered":"<p>Apr\u00e8s les p\u00e9toncles, le veau et cela se mari tr\u00e8s bien aussi.<\/p>\n<p style=\"text-align: center\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.peches-mignons.fr\/wp-content\/uploads\/2008\/01\/P1010304.jpg\" alt=\"Veau, \" title=\"Saut\u00e9 de veau au Noilly Prat\" border=\"0\" height=\"301\" width=\"400\" \/><\/p>\n<p><!--more--><\/p>\n<p>Pour 4 personnes<\/p>\n<p>&#8211; 800g de veau (\u00e9paula, carr\u00e9, flanchet)<br \/>\n&#8211; 30g de beurre<br \/>\n&#8211; 4 \u00e9chalotes \u00e9minc\u00e9es<br \/>\n&#8211; 5cl de Noilly Prat<br \/>\n&#8211; 20cl d&rsquo;eau<br \/>\n&#8211; 2 cc de fond de veau<br \/>\n&#8211; 1 pinc\u00e9e de sucre<br \/>\n&#8211; 1 feuille de laurier<br \/>\n&#8211; 4 feuilles de sauge<br \/>\n&#8211; 20 cl de cr\u00e8me fleurette<br \/>\n&#8211; Sel, poivre.<\/p>\n<p>Coupez la viande en cubes de 3 cm de c\u00f4t\u00e9. Faites chauffer le beurre dans une sauteuse, mettez y la viande \u00e0 revenir de tous c\u00f4t\u00e9s et, quand elle a pris une belle coloration, ajoutez les \u00e9chalotes, salez, poivrez. Mouillez avec la moiti\u00e9 du Noilly Prat, ajoutez le fond de veau d\u00e9lay\u00e9 dans l&rsquo;eau, le sucre et la feuille de laurier, baissez le feu et faites mijoter environ 1h \u00e0 feu doux.<br \/>\nAjoutez le reste du vin et les feuilles de sauges hach\u00e9es et laissez mijoter \u00e0 d\u00e9couvert 15 min pour que la sauce \u00e9paississe. Retirez la feuille de laurier et v\u00e9rifiez l&rsquo;assaisonnement, ajoutez la cr\u00e8me et remuez bien.
